I have never watched GoT or read the books, but have just done a binge show catchup over the past 3 weeks to prep for this season. Fantastic. Your podcast reviews were a fun but dodgy moral compass along the way - thanks. As an old D&D player from the '80s, I heard one of you mention Prismatic Spray, so figured you might have some D&D familiarity. Now I've seen your site, I see you are more than familiar - I thought I heard the clatter of dice in the background... Should have realised earlier as GoT is pure heroin for the D&D player, especially the way we used to play.
On to my point. Now that I've finally made the D&D connection, I have decided alignments and character classes in my head. Here's a few to kick off:

Stannis Baratheon: Lawful Neutral Fighter
Brienne of Tarth: Palladin
Samwell Tarly: Lawful Good Cleric
Jamie Lannister: Chaotic Good Fighter
Jamie Lannister when he is in the same room as his sister: Lawful Neutral Fighter
Ned Stark: Lawful Good Fighter
Jaqen H'ghar : Lawful Neutral Assassin

Tywin Lannister - Lawful Evil Fighter
Varis - Chaotic Good Bard
Jon Snow - Neutral Good Fighter
Arya Stark - True Neutral Rogue (currently multi-classing to assassin)
Mellisandra - Lawful Neutral Cleric
Tyrion Lannister - Lawful Neutral Rogue
The Mountain - Chaotic Evil Fighter
The Hound - Neutral Evil Fighter
Ramsey Bolton - Chaotic Evil Fighter
Roose Bolton - Neutral Evil Fighter

This is all I can think of right now but it seems like a lot of the characters would be fighters.
